Winery Description:

At the heart of Castel Sallegg’s winemaking lies its historic cellar, where time and tradition shape every bottle. During restoration work in the late 19th century, a thousand-year-old vaulted chamber was discovered beneath the castle, now beautifully restored and integrated into the winery. Today, these ancient stone walls provide the perfect environment for maturation, ensuring ideal humidity and temperature as the wines rest in oak barrels. Under the guidance of cellar master Matthias Hauser, each wine develops its distinct character, expressing the terroir with elegance, freshness, and harmony. Descending through the castle’s three floors reveals a fascinating world: the fermentation cellar, the barrique cellar for white and red wines, and finally the archive cellar, where rare vintages mature in silence. Castel Sallegg’s wine cellar is more than a production space—it is a living story of heritage and craftsmanship, where history and passion come together in every glass.
