Your visit begins in high-altitude vineyards at 610–650 meters, shaped by mountain breezes and mineral-rich soils. Farmed organically and tended by hand, each parcel is matched to the grape variety that thrives best in its microclimate. You’ll then explore a 15th-century cellar, restored to preserve its ancient stone vats and now used for aging sparkling wines with the traditional method. In the aging room, large oak casks hold wines crafted from local varieties, including the recently rediscovered Cesanese of Castelfranco—an indigenous grape with notes of wild berries, cocoa, and black pepper. The experience ends with a guided tasting of four wines paired with house-made cured meats.
