Continue with a guided tasting of 3–4 Prosecco varieties made exclusively from estate-grown grapes, paired with Bibanesi and grissini to highlight their fresh, delicate flavors. Afterward, enjoy a self-guided walk among the vineyard rows, where harvesting is still done entirely by hand. In the underground cellar, learn how grapes are gently destemmed, softly pressed, and fermented in temperature-controlled vats before undergoing spumantizzazione with the Charmat method to create an elegant, persistent perlage.
